Canterbury Park

Canterbury Park is one of Minnesota’s most established entertainment destinations, anchoring a rapidly growing district in Shakopee that includes live horse racing, a 19,000-seat amphitheater, and year-round events attracting over a million visitors annually. We worked with Canterbury Park and other strategic partners to design a hotel concept for the district, leveraging the area’s strong visitor traffic and ongoing investment in residential, entertainment, and infrastructure development.

Maite Kuhns Consulting

Maite Kuhns brings over 26 years of restaurant and hospitality experience, with a specialization in F&B culture, training, and service operations. Having led more than 30 restaurant openings, Maite has been a key partner in Scalzo’s F&B launches—from menu engineering and team hiring to staff training, soft openings, and post-opening follow-up. Her focus on building strong service culture from day one aligns directly with how we approach every new operation.

EOS Entrepreneurial Operating System

Jeff Wedren has over 20 years of experience as an EOS Implementer, helping leadership teams gain traction through the Entrepreneurial Operating System. One of the original EOS clients, having worked directly with Gino Wickman, Jeff introduced EOS to Scalzo and guided our leadership team through implementation. Today, Jeff remains an invaluable resource as we continue to grow and refine our process.
