Our Process

THE SCALZO DIFFERENCE

A proven system. Applied to hospitality.

How we work matters as much as what we deliver. That’s why we run every property on EOS—the Entrepreneurial Operating System®. EOS gives us a shared framework to stay aligned and keep each other accountable. Because when process becomes culture, performance follows.

But a system alone isn’t enough. What makes ours different is the people behind it. We’re owner-operators and hospitality veterans who built this process on decades of experience. Every EOS tool is filtered and finetuned through the realities of everyday operations.

That’s the discipline. That’s the difference.

Our EOS-driven management framework goes to work immediately, so that your property runs the way it should right from the start.

WHAT IS EOS?

Structure. Focus.
Accountability.

The Entrepreneurial Operating System® is a proven framework used by thousands of companies worldwide to align teams, set priorities, and create a consistent rhythm of execution. At Scalzo, EOS is how we translate our values into daily operations.

What does that look like in practice? It starts by ensuring the right people have the right roles and every function in the business has a clear owner. It stays through structured, focused weekly meetings, clearly defined quarterly priorities, a handful of KPIs reviewed weekly, and an effective method for resolving issues quickly.

Weekly L10s

Leadership teams meet weekly for a focused session with a structured agenda to review “Rock” progress and “IDS” issues before they grow.

IDS

Identify. Discuss. Solve. Every week. Problems surface fast and get resolved now so that the same issue doesn’t come back next quarter.

Scorecards

A handful of KPIs per team member, reviewed weekly, so leadership always knows where things stand. Surprises are a thing of the past.

Quarterly Rocks

Every 90 days, each team sets a small number of clearly defined goals. The things that need to get done, tracked to completion.

Accountability Chart

Having the right people in the right seats is fundamental to success. The ideal organizational chart is designed and populated, defining what functions the business needs and the roles each seat has. Each person accountable for one role. No gaps, no overlaps, and no confusion about who is responsible for what.

EOS IMPLEMENTATION

Drafting a game plan and executing it.

Anyone who has implemented EOS will tell you that it’s no walk in the park. Our EOS partner tells the story.

“It’s been an amazing journey to watch and be a part of.”

Get Started

Three steps.
One Partnership.

Every project starts from a different place. We meet you where you are.

2222

Conversation

It starts with a real conversation—ideally in person or over video. We want to understand your property, your goals, and what’s prompting the change. You want to understand how we work and whether we’re the right fit.

222

Discovery

If there’s a fit, we go deeper. Together, we look at your property’s current performance, team structure, and operational realities to define where things stand and where the opportunities are.

22

Engagement

Based on what we learn, we propose a way forward that matches your situation—whether that’s full operational management, development support, or something more targeted.

Strategic
Guidance

For owners facing specific challenges or exploring new opportunities. Market analysis, feasibility, operational improvements, or targeted support across key areas.

Operational Leadership

For owners ready to hand over day-to-day management to a partner who will run it like their own. A structured transition across four phases, EOS-driven processes, and a team aligned to deliver consistent results.
